  1. Basmati rice (3 cups).
  2. Ghee (2 tablespoons).
  3. Cinnamon sticks (2 large).
  4. Cardamom pods (5-6).
  5. Bay leaves (2).
  6. Coriander seeds (1 tablespoon).
  7. Cumin seeds (1 teaspoon).
  8. Onion (1, chopped).
  9. Green chilies (2, chopped).
  10. Ginger-garlic paste (1 tablespoon).
  11. Tomatoes (2, chopped).
  12. Yogurt (1/2 cup).
  13. Garam masala (1/2 teaspoon).
  14. Turmeric powder (1/2 teaspoon).
  15. Red chili powder (1/2 teaspoon).
  16. Coriander powder (1/2 teaspoon).
  17. Salt (to taste).
  18. Fried onions (2 tablespoons).
  19. Mint leaves (2 tablespoons, chopped).
  20. Coriander leaves (2 tablespoons, chopped).
  21. Water (4-5 cups).

Step-by-Step Instructions:

  • Soak 1 cup of basmati rice in 3 cups of water for 30 minutes. 
  • Heat 1 teaspoon of oil in a large pan over medium heat and add 1 teaspoon of cumin seeds, 1 bay leaf, 1 cardamom pod, 1 cinnamon stick, and 2 cloves.
  • Once they start to sizzle, add 1 diced onion and sauté until it turns golden.
  • Add 1/2 teaspoon each of turmeric powder, garam masala, coriander powder, and red chili powder, and sauté for 1 minute.
  • Add 1 diced tomato and 1/4 cup of water and cook until the tomato is softened.
  • Add 1 cup of diced vegetables such as carrots, potatoes, peas, and bell peppers, and cook for 3 minutes.
  • Add 1 cup of yogurt and cook for another 2 minutes.
  • Drain the soaked rice and add it to the pan, along with 2 cups of water.
  • Bring the mixture to a boil, cover the pan, reduce the heat to low, and cook for 15 minutes.
  • Turn off the heat and let the biryani stand for 10 minutes.
  • Fluff the biryani with a fork and serve it hot with a side of raita.
