How to Make Kheer at Home

Ingredients
Rice Kheer is a traditional Indian dessert made with cooked rice, milk, sugar, and cardamom. You will need:
- 2 cups of long grain white rice
- 6 cups of whole milk
- 1/2 cup of sugar
- 2 tablespoons of clarified butter (ghee)
- 2 teaspoons of cardamom powder
- raisins and/or chopped almonds (optional)
Rinse the rice until the water runs clear. Drain the water and set aside.
Pour the milk into a large pot and bring it to a gentle boil over medium heat.
Once the milk is boiling, add the rice and stir to combine.
Reduce the heat to low and simmer for 25-30 minutes, stirring every few minutes.
Once the rice is cooked and the mixture has thickened, add the sugar, ghee, and cardamom powder. Stir to combine.
Simmer for an additional 5 minutes.
If desired, add raisins and/or chopped almonds.
Serve hot or cold.
