How to make RasMaLai?
Ras Malai is a popular dessert originating from the Indian subcontinent. It consists of soft, spongy cheese balls soaked in a sweet and creamy milk syrup, flavored with cardamom, saffron, and rose water. It is typically served chilled and garnished with chopped nuts, such as pistachios or almonds.
Ingredients
- 1 liter of whole milk
- 2 tablespoons of lemon juice or white vinegar
- 4 cups of water
- 1 cup of sugar
- 4-5 green cardamom pods, crushed
- 1 tablespoon of rose water
- Sliced pistachios and almonds for garnish (optional)
Recipe:
In a mixing bowl, combine 2 cups of milk powder, 2 tablespoons of all-purpose flour, and 1 teaspoon of baking powder.
Add 1/4 cup of melted ghee and mix well to form a crumbly mixture.
Gradually add 1/2 cup of warm milk, and knead into a smooth dough.
Divide the dough into small equal balls and flatten slightly.
In a large saucepan, bring 4 cups of milk to a boil.
Add 1/2 cup of sugar, 1/4 teaspoon of cardamom powder, and stir well.
Gently add the flattened dough balls to the boiling milk and cook for 10-12 minutes.
Turn off the heat and let the Ras Malai cool in the milk for about 30 minutes.
Garnish with chopped nuts and serve chilled.
